Gluten-Free Crispy Fried Chicken (Better Than Takeout!)

Ingredients
For the chicken:
- 1.5 kg chicken drumsticks or chicken pieces (skin-on recommended)
- 2 cups buttermilk (or milk + 1 tbsp lemon juice)
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- ½ tsp cayenne pepper (optional)
Gluten-free coating:
- 1 ½ cups gluten-free flour blend
- ½ cup cornstarch (for extra crispiness)
- 1 tsp baking powder
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano or thyme
- 1 tsp salt
- ½ tsp black pepper
For frying:
- Vegetable oil (enough for deep frying)
Instructions
- Marinate the chicken
- Place chicken pieces in a bowl with buttermilk, garlic, salt, pepper, paprika, onion powder, and cayenne.
- Cover and refrigerate for at least 4 hours, preferably overnight for maximum tenderness.
- Prepare the coating
- Mix gluten-free flour, cornstarch, baking powder, and all spices in a large bowl.
- Add 2–3 tablespoons of the marinade into the flour mixture and rub lightly to create small clumps for extra crunch.
- Coat the chicken
- Remove chicken from the marinade and let excess drip off.
- Press each piece firmly into the gluten-free coating until fully covered.
- Cook the chicken
- Heat oil to 170–175°C.
- Fry chicken pieces for about 12–18 minutes depending on size, turning occasionally.
- The internal temperature should reach 74°C.
- Rest and serve
- Place fried chicken on a wire rack to keep it crispy.
- Rest for 5 minutes before serving.
Tips for extra crispiness:
- Double coat the chicken (marinade → flour → marinade → flour).
- Use cornstarch in the coating for a lighter crunch.
- Do not overcrowd the frying oil.
- A gluten-free flour blend containing rice flour works especially well.
